Finca El Diviso is a world-renowned specialty coffee farm located in the Huila region of Colombia(specifically in Bruselas, Pitalito), managed by the visionary Lasso family (Nestor and Adrián Lasso). The farm has achieved global acclaim in the specialty coffee industry for its highly innovative, scientific, and experimental processing methods. Here is a quick summary of what makes it unique:
- Exceptional Terroir: Situated at an altitude of 1,750 to 1,900 meters above sea level in the Colombian Massif, the farm benefits from fertile volcanic soil and a cool climate, allowing coffee cherries to mature slowly and develop complex sugars.
- Exotic Varieties: The farm focuses on rare, high-profile coffee varieties rather than commercial ones. Their most famous crops include Ombligon (highly sought-after for its intense tropical fruit and floral profile), Pink Bourbon, Sidra, Geisha, Tabi, and Java.
- Thermal Shock Innovation: They are famous for their advanced fermentation protocols. This includes strict anaerobic fermentations, specific yeast inoculations, and a "thermal shock" washing technique(alternating hot and cold water) that seals complex fruit flavors (like strawberry, kiwi, and guava) inside the beans.
Thanks to these cutting-edge techniques, Finca El Diviso coffees are frequently featured by world-class roasters and used by top competitors in World Barista Championships.
Néstor and Adrián Lasso represent the new wave of specialty coffee in Colombia. These two brothers, now in their mid-to-late twenties, took over their family estate, Finca El Diviso in Pitalito, Huila, turning a traditional farm into a global laboratory for experimental coffee. Here is a quick summary of their inspiring journey:
- Saving the Family Farm: Coming from a third generation of coffee growers, the brothers faced financial ruin around 2017 when selling coffee on the traditional commodity market. They made the bold, risky decision to stop focusing on volume and switch entirely to ultra-premium, rare varietiesand scientific processing.
- The Perfect Dynamic Duo: The brothers divide their labor with high precision. Néstor is the mastermind behind agriculture and the farm's highly complex fermentation and "thermal shock" protocols. Adrián focuses on analytical roasting, cupping (tasting), and meticulous post-harvest quality control to ensure every batch is flawless.
- World Championship Glory: After years of trial and error, their hard work paid off on the grandest stage. In 2022, Anthony Douglas won the World Barista Championship (WBC) using a Sidra lot produced by Néstor and Adrián. In 2023, Jack Simpson placed 3rd in the world using their signature Ombligón variety.
Today, the Lasso brothers are globally recognized figures in the specialty coffee industry, and their experimental lots are highly coveted by top boutique roasters worldwide.
