This coffee is produced by a community of coffee growers known as Ephtah Specialty Coffee, an organization dedicated to building sustainable and collaborative supply chains that benefit customers, farmers, and their communities. The company emphasizes promoting the role of women in the coffee industry, recognizing their pivotal role in driving social and economic change in Ethiopia. In 2023, Ephtah acquired its own drying station in Lalesa, Gedeb. With over four hundred drying beds, it is the largest facility in a region renowned for producing high-quality Ethiopia’s coffees.
Only the best cherries are selected, floated, and pulped. The coffee is then fermented in tanks without water and dried for 10 to 15 days. This processing method ensures the highest quality of coffee, primarily focused on enhancing flavor clarity and consistency. The result is a a brighter, cleaner, and more vibrant cup profile with pronounced acidity and distinct aromatic compounds.
