the story of this coffee:

Third-generation producer Evelio Mota inherited his passion for coffee production from his grandparents. Evelio collaborates with 14 producers in his region, all of whom are recognized for their meticulous processing and excellent quality. Motta is related to 4 of the producers in his group, including his cousin, Edgar Mota of Finca Buena Vista.

Evelio has big plans for coffee production on Finca El Triangulo and his region at large. As part of his collaboration with neighboring producers, Evelio is working to increase their collective market access and generate interest in their coffees. He has plans to improve drying infrastructure on his farm and renovate his rootstock to increase his coffee quality.

Evelio continues to seek new ways to improve his coffee quality. His thirst for knowledge drives him to discover more efficient practices, improve processing and increase overall quality. He also receives technical support from Inconexus.

Harvest & Post-Harvest

Evelio selectively handpicks ripe cherry and processes it on his farm. He pulps cherry and lays it to dry in his casa elba – drying beds built into the roof and eaves of his home. He gives his drying coffee meticulous attention, raking it frequently and protecting it from nighttime moisture and mists by covering it with waterproof sheets each evening.

Inconexus Guacharos Program

Inconexus’s Guacharos program, named after a bird species indigenous to Central and South America, supports farmers working to improve their coffee quality while preserving their surrounding environment and reduce the impact of their farm’s ecological footprint.

About Pink Bourbon

Pink Bourbon, a hybrid of Yellow and Red Bourbon varieties, was first discovered and grown in Colombia. Taste-wise, Pink Bourbon has all the advantages of its Bourbon parents. The highlights of the typical Pink Bourbon profile is the strong floral notes and pleasant acidity frequently found in East African coffees.

And there’s more than color and altitude on its side. Chemical breakdowns have found that Pink Bourbon has higher glucose content. This additional glucose—a type a sugar—means not only a sweeter cup, but also a silkier body and more luscious mouthfeel.

Some farmers also report that Pink Bourbon has more disease resistance than is Red and Yellow parents.

Coffee in Colombia

Colombia has been producing and exporting coffee renowned for their full body, bright acidity and rich aftertaste, since the early 19th century.

Colombia boasts a wide range of climates and geographic conditions that, in turn, produce their own unique flavors in coffee. This also means that harvest times can vary quite a bit. In fact, between all its different regions, Colombia produces fresh crop nearly all year round.

The increasing focus on the specialty industry is changing the way traders and farmers do business. It is becoming more common for farmers to isolate the highest quality beans in their lots to market separately. These higher-quality lots are often sold under specific brands or stories.

Besides its wide variety of cup profiles, Colombia has quickly expanded its certification options over the past 10 years. The most common certifications available are Fairtrade, Rainforest Alliance, UTZ and Organic.
